Cut the potatoes and put them in a bowl. Add the eggs, cooked ham, cheese, onion, parsley, pepper, salt and flour and mix well.
Pour the olive oil into the pan and start adding the mixture, flattening it with a spoon.
Fry pancakes until golden brown on both sides.
